Add onion, carrot and celery; cook, stirring, until vegetables start to soften, about 3 minutes. Add garlic, Italian seasoning ... the sprouts and allow them to steam in a strainer for 3 minutes.
Trim and tear the mushrooms, and cut the tofu into finger-thick pieces. Combine the seasoning ingredients in a bowl. In a heated pan, add 1 tablespoon of perilla oil and brown the tofu on all sides.
